While I'm not Irish by heritage, I do appreciate the significance of the day. In my own way to recognize the importance of wearing green, I choose to layer up the greens to eat the colour instead (my favourite colour)! 😂

What do we have here? Can you see all the green plant-based foods I chose for my salad?
.
Spinach, green onions, sugar peas, pea shoots, avocado and pumpkin seeds were purchased at my favourite local food establishments, @naturesfaremarkets and @farmboundbox. The sunflower shoots are from local @pilgrimsproduce, purchased at the Vernon Seedy Saturday event. (Nice to meet you, and I'm looking forward to planting your German butter seed potatoes!)

I made a creamy dreamy dressing out of 1/2 an avocado with 3 Tbsp @oliveoilbc Sicilian Lemon balsamic vinegar, 1 tsp lemon oil oil, and a pinch of Thai Ginger sea salt (all from locally owned Olive Us).

What a beautiful salad - no filter or colour edit - with exceptional taste, and outstanding nutrition. Easy to make too! Terrific lunch. I encourage you to make it too. A perfect way to kick off spring this week with green food.

I bought this delicious local sorbetto at @naturesfaremarkets; I'm proud to do a shoutout to folks from my home province of Alberta. Thank you @fiascogelato for another party-in-your-mouth exceptional flavour. Raspberry Lime has to be my new favourite right now!

Since it's been warming up dramatically here in Vernon, I thought it the perfect day to crack open a new batch and enjoy outside. Oh yum. And the vibrant colour goes well with my new pretty primroses I purchased at the season grand opening of The Flower Spot, my local flower greenhouse.

Totally need to focus on local bakeries that make pie, like our local @hotbreadshoppe in Vernon. And of course I made purchases! The first pic is an old fashioned 4-slice (or 2 LOL!) Apple Pie. The hand pies are Raspberry Jam. Of course I bought one as well. I shared it with my hubby. I know, mighty nice of me. 😁
